Raw Pumpkin Pie

This is an easy healthy Thanksgiving dessert that tastes just like the real thing! You are sure to make your family and guests happy with this one!

There are still calories, but it doesn’t compare to the calories and unhealthy fat in normal pumpkin pie. This is a healthier mindful choice for a dessert.

This pumpkin pie is light and tasty, so you can eat it without feeling guilty afterwards! Because of all the healthy nutrient rich ingredients, such as almonds, dates, pumpkin, and ginger, enjoy a small slice as a snack the next day without worrying!

Hopefully this yummy & nutritious recipe empowers you to want to serve and make a healthy Thanksgiving meal this year and be an example of health for others.


Crust:
2 cups almonds
1 cup dates, pitted
½ teaspoon salt
½ teaspoon coconut oil, melted

Filling:
2 cups pumpkin
1 cup soaked dates, pitted
2 teaspoons pumpkin pie spice
1/3 cup coconut oil (yummm)  melted
¼ teaspoon vanilla powder
½ cup water (filtered if possible)
1 teaspoon fresh ginger, peeled
1 teaspoon sunflower lecithin
¼ teaspoon Kalahari salt

Directions:
Add crust ingredients to food processor, except for the coconut oil, and process until well mixed.



Rub pie plate with coconut oil so that the crust does not stick. Distribute crust in pie evenly. Place in freezer to set for 10 minutes.

Next, place filling ingredients in blender and blend on high.



Adjust flavors to your liking.

 Pour onto crust and place back in freezer to set for another 1/2 hour.
