Sushi Style Nori Handrolls!

With summer right around the corner, and an abundance of greens in bloom I have been in the mood for refreshing meals, I made some Sushi Style Nori Handrolls this past weekend and wanted to share!


 
These raw vegetarian handrolls are a delicious creation of mine that I love to serve as an appetizer or make for lunch with a side salad. They are light and clean, and full of nourishing vitamins and minerals. Did you know that nori (seaweed) has more minerals than any other food on earth? In addition, I like adding sprouts to this recipe because they are a good source of protein, and when eating vegetarian we still need to be aware of getting our protein in. Sushi Style Nori Handrolls
Ingredients:

2 sheets of Nori (seaweed)
1 sliced ripe avocado, organic if possible
1 handful of sprouts
1 peeled and sliced cucumber, I like Persian cucumbers
2 tablespoons sesame seeds or chia seeds
1 tablespoon of your favorite miso dressing or gluten-free reduced sodium soy sauce
 
Preparation:
Place sliced cucumber in the middle of nori sheet. Place sprouts on top of cucumber followed by the avocado slices. Drizzle on your dressing. Sprinkle on sesame seeds. Finish by wrapping tightly into a roll and slicing. Feel free to dip into miso dressing or soy sauce and enjoy!
