Kale is one of the healthiest cruciferous vegetables around. My feeling is that you can never get enough kale!
Kale lowers cholesterol, contains antioxidants, has anti-inflammatory properties, cancer-preventative benefits, and much, much more. If your diet is lacking in vitamins K, A, or C, kale is an excellent choice as the % Daily Value far exceeds most vegetables. Kale is also high in manganese, a wonder mineral for increasing libido. It is also high in fiber, which aids in regulating the digestive system. Most green juices contain kale for their amazing detox properties.
I encourage you to try the different varieties of kale to see which kind tastes the best to you. Curly kale is the most mainstream, showing up now at salad bars and supermarkets.
I enjoy raw kale salads and sautéing my kale with organic cold-pressed olive oil. I also love to snack on kale chips.
