Zucchini Noodles Recipe

With the seasons changing so quickly here in southern California I find my self reaching for meals that contain the veggies in season, zucchini seems to be around for most of the year but lately they have really great flavor; so this past weekend I took advantage and made Zucchini Noodles! 
It's a really easy light dish with such a minimal prep time, and while staying on path of mindful eating your body is sure to thank you for this nutrient filled meal!

Ingredients: 
-3 tablespoons olive oil
-3 cloves garlic chopped
-1 shallot chopped
-3 zucchini peeled into noodles
-pinch of salt and pepper
-pinch of Italian Seasoning

Preparation:
1. In a large pan, heat oil over medium heat. 

2. Reduce heat to medium-low and add onions, shallots, and Italian seasoning
3. Saute for 5 minutes

4. add zucchini noodles & saute for 5 minutes uncovered. 
5. cover pan with lid and saute for 1-2 minute on high until slightly crispy
