Sushi Style Nori Handrolls!

With summer right around the corner, and an abundance of greens in bloom I have been in the mood for refreshing meals, I made some Sushi Style Nori Handrolls this past weekend and wanted to share!


 
These raw vegetarian handrolls are a delicious creation of mine that I love to serve as an appetizer or make for lunch with a side salad. They are light and clean, and full of nourishing vitamins and minerals. Did you know that nori (seaweed) has more minerals than any other food on earth? In addition, I like adding sprouts to this recipe because they are a good source of protein, and when eating vegetarian we still need to be aware of getting our protein in. This refreshing dish is great as we mindfully enter the warmer days!  You can also check out a video of me making these easy creations Here!
 
Sushi Style Nori Handrolls
Ingredients:

2 sheets of Nori (seaweed)
1 sliced ripe avocado, organic if possible
1 handful of sprouts
1 peeled and sliced cucumber, I like Persian cucumbers
2 tablespoons sesame seeds or chia seeds
1 tablespoon of your favorite miso dressing or gluten-free reduced sodium soy sauce
 
Preparation:
Place sliced cucumber in the middle of nori sheet. Place sprouts on top of cucumber followed by the avocado slices. Drizzle on your dressing. Sprinkle on sesame seeds. Finish by wrapping tightly into a roll and slicing. Feel free to dip into miso dressing or soy sauce and enjoy!

Plate - Earthly California Cusine

Plate in Malibu is one of my new favorite restaurants. It is a small, zen-like environment with amazing food near the beach. I have been multiple times in the past several months.
                                             

The food is all organic and natural. All of their fish is fresh and their poultry and meat is free-range.
 I love their vegan soups to start and the Black Berry Spinach Salad is the best!

My favorite entrée is the fresh Chilean Sea Bass with sautéed spinach; it is cooked perfectly, with no heavy dressings. And their vegan vanilla ice cream with berries is also a delicious end to any meal there.

When I eat at Plate, I feel like I am eating fresh home cooked meal that was just picked from the garden!    
For delicious organic food in a beachy, zen atmosphere I definitely recommend Plate!

Shamrock Shake!


With St. Patricks day right around the corner I thought it would be a great idea to post a festive smoothie to ring in the holiday, all while being mindful of what I am putting in my body!

Below I have posted a recipe for my ultimate energy boosting Super Green Smoothie!
Its packed with lots of minerals and protein and vitamins, it's a wonderful way to start the day at breakfast, to amp up your energy and keep you going until lunch, your body will definitely thank you for this sweet treat!


INGREDIENTS:
   1 fresh Thai coconut
   1 1/2 scoops vegan vanilla Sunwarrior protein powder
   1 cup of spinach
   1 cup of arugula
   1 cup of swiss chard
   2 droppers of stevia
   2 tablespoons of Sun Is Shining
1 bannana    

And in no time, you have your amazing, Super Green Smoothie! If you happen to be going out to celebrate St. Patricks Day with a beer or two, this smoothie is a great way to feed your body the nutrients the morning after the fun or even the morning before!

Kreation Kafe Review



I really love discovery new eateries, especially fresh, healthy ones that I can walk away from knowing that I truly treated my taste buds and my body!
Kreation Kafe & Juicery on Montana St. in Santa Monica is my new favorite restaurant! Their delicious food is mostly local and organic from the farmer’s markets. My mom and I had breakfast there and it was so delicious and fun! We sat outside in the front on a small patch of grass at a café table in the morning sun; you can also sit in the back on benches or tables or inside.


  The walls of the restaurant outside are designed to be living topiaries, you truly feel  like you are in a magical zen garden! You cannot help but feel more mindful and conscious.

We both enjoyed delicious omelets and green juices, I love their cold pressed juice bar too. My favorite juice is the Green #3 which is jam-packed with greens. I also hear that the kabobs on the hot menu are amazing!
            After breakfast, with all that delicious healing energy in us, my mom and I took a walk on the beautiful Montana Street and window-shopped! It was a great morning! I highly recommend Kreation Kafe for healthy, delicious fare and a beautiful, bright environment!
